Yogurt Parfait With Cherry Compote And Granola

The sweetness of the compote complements the tanginess of the yogurt, while the crunchy granola adds texture. Make the cherry compote ahead and you can throw this dessert together at the last minute. Feel free to substitute jam (any kind) if you don't want to make compote.
Ingredients
- 2 cups frozen cherries
- 0.5 cups sugar
- 2 tablespoons water
- 1 teaspoon lemon juice
- 1 teaspoon vanilla extract
- 900 grams yogurt
- 1 cup granola
- 3 tablespoons honey
- 6 mint leaves

Cherry Compote

Combine the frozen cherries, sugar, water, lemon juice, and vanilla extract in a saucepan. Cook over medium heat, stirring until the sugar dissolves and the cherries soften, about 15 minutes. Remove from heat and let cool completely. You can make this ahead and store it in the fridge.

Assemble the parfait in layers in a bowl or a narrow glass. Start by adding a heaped spoonful of yogurt, then top with a generous spoonful of cherry compote, and finish with granola.
