Apple Pie Vinegar

Infuse apple cider vinegar with traditional sweet and savoury apple pie spices for a dessert-inspired vinegar you can use in savory dishes.

I was inspired to create an infused vinegar based on apple pie flavors. Apple cider vinegar provides the vinegar base and the apple notes. For a slightly spicy hint, I’ve also added black pepper and ginger, and rounded it off with lemon peel for a citrusy finish.
Ingredients
- 250 millilitres apple cider vinegar
- 1 teaspoon cloves
- 3 star anise
- 1 stick cinnamon
- 0.5 teaspoons nutmeg
- 1 teaspoon cardamom pods
- 1 teaspoon black peppercorn
- 3 piece ginger
- 1 lemon

Combine the spices, ginger slices and lemon peel in a jar.

Heat the apple cider vinegar in a pot over medium heat until it is simmering but not boiling.

Pour the hot apple cider vinegar into the jar with the spice and lemon mixture. Allow to cool completely, then seal tightly.

Let the mixture sit in a cool, dark place for at least two weeks, shaking it every few days to mix.

After two weeks, strain the infused vinegar into a clean bottle through a fine mesh sieve or cheesecloth to remove solids. Store in a cool place; your fridge is ideal.
